1 pint rough red wine
1 pint vinegar 2 pints elderberries A teaspoon of salt 50 peppercorns 10 cloves One small onion finely chopped A small handful of dried mushrooms A pinch of mace 10 schewuane pepper corns Put the wine, vinegar and berries in a large pot or non metal saucepan. Put over a low heat or in a slow oven for hours (taking an hour or two to reach simmering point is ideal. Leave to sit for at least 12 hours and then stain through jelly bag over night. Reheat with spices and flavourings and bottle whilst still hot. Or reheat, bottle and shove the spices into the bottle. Leave to mature for at least 3 months preferably a year. 12oz flour
1 tsp bicarb 1 tsp cinnamon 2 tsp ginger 5oz butter 4 oz sugar 4 oz honey 1 egg yolk 2 tbsp milk Beat sugar and butter, add honey and yolk and beat again. Stir in all the powders and knead lightly. Roll and cut. Bake at gas mk 4 for at least 15 mins. Wacky cake mix as before (remember to make the filling first)
For the filling: 8oz cream cheese ⅓ cup sugar 1 large egg ½ vanilla extract Beat together Add wacky cake mix to 12 muffin cases, add a dollop of filling to each case. Bake for 25 mins at gas mk 4 The wonders of an eggless cake. cooked in a microwave, really shouldn't work but it does.
1½ cups flour ½cocoa powder 1 cup sugar 1 tsp bicarb Sift into a microwavable bowl In another bowl mix: 1 cup water ½oil 1 tsp vanilla essence 1 tbsp white vinegar Working quick, add the wet stuff to the dry stuff and fold in. Microwave for 8 mins Make a base using ½ a packet of malted milk biscuits and ½ a packet of hobnobs with 100g of unsalted butter. Melt butter add smashed biscuits, press into 10 inch tin.
Mix a carton double cream with two tubs full fat cream cheese, 4 eggs, 3tbls sugar, 1tbls custard powder and a good splash of Galliano stir in 2 big bars melted white chocolate (400g total, Aldi does one that melts nicely). Put in cold oven and bake for 1 hour at gas mk 2½, leave to cool in oven with door shut. Chill well Tastes like a custard slice and very unhealthy, but yummy Liquidise rocket, spinach and mint with too much olive oil and a few green olives and capers add half a tsp of honey, clove of garlic and lemon juice.
Substitute coriander, neutral oil, light soy sauce and lime juice for an oriental twist. Raid the garden for alternative greens Soften 2 chopped onions, throw in 2-3 peeled chopped parsnips, a carrot, clove of garlic and a yellow pepper. Sweat until nice and soft. Add a tsp of curry paste, stock powder, water and a tin of white beans. Simmer for a while and then liquidise. Bring back to the boil, adjust seasoning and thin with milk if required. A squeeze of lemon or lime lifts the taste.
Finely slice an onion, shred and wash 2 leeks well, chop three medium size potatoes. Sweat in a pan with a good fitting lid with some light olive oil, butter and a small splash of water (stops the potatoes sticking and allows them to steam a bit). When all a little softened, add a mix of water, milk and stock powder then cook for a further 5 mins or so. Waxy new potatoes or old floury potatoes can be used and it's up to you whether or not to peel all or some of them. Add some chives, spring onions or triangular leeks at the end of cooking to add a fresh taste.
