Muffins, because life would not be complete without mum's recipe
For old ladies with fat on their knees, bits is the flavouring i.e. a cup of chocolate chunks, chopped plums and almonds, mixed peel and white chocolate or anything else that appeals but never pebble dash.
In bowl one:
2 cups flour
1 cup oats
half to two thirds of a cup sugar
2 teaspoons of baking powder
1 cup of bits
In bowl 2:
half to two thirds of a cup of oil
1 cup liquid (milk or juice and water mixed a bit of alcohol is ok)
stir the wet ingredients into the dry and mix a brief mix. Divide evenly between 12 muffin cases.
bake at gas mk 5 for 24 mins
For coffee and walnut cake use cold espresso for the liquid and then either a whole cup of chopped walnuts or a mix of walnuts and white or plain chocolate..
A cup of blaeberries almost rivals Grandad's Jammies.
